Be afraid or be brave, in the words of Google themselves:

“This is BETA, it is not an official release, it might break your browser. Chances are it will break your browser. Please proceed with caution.”

If you choose to ignore the warning Google laid out for the beta they want you to try, you’ll need Safari 3.1.1, Tiger 10.4.11 or Leopard 10.5.3. 

If your Safari browser doesn’t break, you’ll be able to use Google Docs, GMail and Google Reader offline.  Is it worth the risk?  Absolutely, you can always re-install Safari.
