You buy a fresh lemon because you need 1 tablespoon for a recipe. But what do you do with the remaining lemon. You can keep a reserve stock of citrus on hand by freezing lemon and lime wedges in a resealable plastic bag. Simply, slice up the lemon or limes, place them in a plastic resealable bag, squeeze the air out, seal and freeze. Then when you need the juice, pop a wedge or two in the microwave for about 20 seconds and use as need. The juice will taste as fresh as the day you bought the fruit. So when you need a squeeze, you have it in a flash.
